Apple cake with brown sugar

12 pieces

Ingredients:

1/3 of a cup brown sugar
1 tsp. cinnamon
2/3 of a cup white sugar
2 eggs
1 ½ tsp. vanilla extract or 2 vanillin capsules
1 ½ of a cup flour
1 ¾ tsp. baking powder
1/2 of a cup low fat milk
1 apple, pealed and finely sliced
1/2  of a cup butter at room temperature

Instructions:

Preheat the oven to 175°C (347 °F) degrees. Butter and flour an elongated cake tin 22x12.5 cm (8.6x4.9 in). In a bowl, mix the brown sugar and cinnamon. Beat the white sugar and butter with a mixer until fluffy. Add the eggs, 1 at a time, until incorporated and then add the vanilla. In a bowl, sift the flour and baking powder and add it to the butter mixture. Add the milk and mix gently for 1΄-2΄. Pour half of the mixture into the mold, add half the apples and half the mixture of brown sugar and press lightly. Top with the rest of the mixture and spread the remaining cinnamon sugar and the rest of the apple, pressing again lightly with a spoon. Bake in the preheated oven until a clean toothpick comes out of the center of the cake, about 50’.

Cook's Tip

For an even more irresistible taste you can add 3 tbsp. grated walnuts along with the apples.
