Bean soup as a salad

6 servings

Ingredients:

For cooking

350 gr. (12.3 oz) medium sized beans
1 onion cut in half
1 whole peeled carrot

For the salad

1 stalk of celery or very finely chopped celery
2 chopped carrots
250 gr. (8.8 oz) cherry tomatoes thinly sliced
1 big finely diced onion
4 finely diced anchovies
1 chopped Florina pepper from a jar
4 tbsp. sliced olives

For the dressing

100 ml. (3.3 fl oz) olive oil
a pinch of paprika
a pinch of cayenne pepper
2 tbsp. vinegar
salt to taste


Instructions:

Soak the beans from the night before. Rinse and boil in 1 liter of lightly salted water together with the onion and carrot for about 55΄- 60΄, until the beans are soft. You can add a tittle more hot water as needed. Remove from the heat, drain and let it cool. Add all the remaining salad ingredients and mix. Then mix all the ingredients for the dressing and add it to the salad.
